Linking to A Latte with Ott, A.'s Clabber Girl Party: PW's Awesome-est Blueberry Muffins

Me?  Cooking two days in a row?  Only in cyberspace can this happen!

Actually the wonderful school where our girls go had a visit a few days back from a team of five for accreditation review, and I volunteered to head up the breakfast and lunch meals.  Not that food would figure into the final evaluation, I still thought we should serve up some awesome goodies, so I went to a source that all my bloggy buddies love:  Pioneer Woman  affectionately also know as PW or P-Dub.

I have a ton of frozen blueberries in the freezer, so I went with her recipe, The Awesome-est Blueberry Muffins, and they were a huge hit.  And guess what?  I used an ingredient in my cabinet that is always on hand, as it has been for my mom and my grandmothers:  Clabber GIrl Baking Powder!

Here is how it goes together:

In a large bowl, sift together 3 C (minus 2 Tbls. flour), 1 tsp. baking soda,
2 tsp Clabber Girl baking powder and a heavy pinch of salt

and a dash of nutmeg.  


Cook's note:  I honestly do not like to use this sifter, but my good ol' strainer that I usually dump all my floury "stuff" into and work through with a spoon is sitting in the sink holding the thawing blueberries!  DANG~!  I need to get another one of those!

K!  Now measure 1/2 C. veggie oil, add an egg and blend then ....

add to 1 C. sugar, 1 GENEROUS C. of plain yogurt (throw in extra if you want!), and
a cap-full of vanilla (now that is my kind of measurement!), and whisk together!

Now add the dry ingredients to the wet and stir to a count of ten.

Cook's note:  PW must have some powerful strokes because I had to stir about 15-20 times and DON"T USE THE WHISK!  I had clumps to dig out from the wires about halfway through when I realized my error!

Add 2 C. Fresh blueberries (save out about a 1/2 C. for topping) and stir 3 (or8) times.

Add  batter to well-buttered muffin tins, sprinkle remaining blueberries on top and then sprinkle turbinado sugar on top.....HUH????  Oh!  The recipe says I can use brown sugar if my IGA doesn't carry turbinado sugar????  Whew!  What the heck is that anyway?  I'll Google it later!

Bake for 20-25 minutes and allow to cool completely!

Did you notice in the first pictures my muffin tins have the paper cups in them?  I opted to NOT use them because they don't fit my tins well and thus make gaps in my cupcakes or muffins!  I put them in AFTER they were done so no one would get blueberry stain on their fingers!

They were yummy!  I will let you click here to see the original recipe on Pioneer Woman's blog.  There is a sauce that goes with it, but I chose to serve them as is.  Mmmm Mmmm Good!

I'm bringing these to our Real Farmwives of America gathering next week!  

Just to show I can have an original thought, I took the same recipe the next day, added cinnamon to the flour, and dried blueberries, craisins, and golden raisins to the mix.  I would also tell you to add some more generous amounts of yogurt to moisten up the dried fruit!  It was a nice switch, so this base recipe is a definite keeper around my house!

Have a great day out there, stay dry, and maybe wonder over to your kitchen for some baking therapy!  It's pretty darned good with a little Clabber Girl and some blueberries!
