Gooseberry Patch Recipe #9: Cinnamon Apple Muffins

YEAH!  It's that lovely time of year when I can run out to our Golden Delicious Apple tree, pick off some fruit, and whip up some yummy goodies for the family to eat.  These treats, however, did not go to all the family.  It was time for Iowa Basic testing last week in Tink's class, and her teacher put in a request for "healthy snacks" during the testing break.

First, you have to go out and pick four apples, or you can find them in your local farmers' market, food stand, or grocery store.  It's best to choose the ones just out of the reach of the cows.  Remember we raise Apple-flavored Beef around here!

 Next bring them in, wash them off, peel them, and quarter them so they are ready for shredding.

 Ok, here we go!

P.S.  I doubled this recipe because there are 16 kids in Tink's class.  I may not have taken math in college, but I know a dozen doesn't equal 16!  Woo!  Go Ball State Cardinals and Purdue Boilermakers!

 Probably would have helped if I had moved the crock pot, but I didn't.  It's just the kind of crazy week I was having.  I put the apples in my salad shooter to shred.  I have one of those old fashioned do-hicky things around here somewhere that you can slide the apple back and forth on, but I usually end up serving part of a nail and some skin from one of my fingers when I use it.  With age comes wisdom!

Just apple without any foreign materials or parts!

The healthy part comes here because I'm using whole wheat flour.  I have to admit, there is a different taste to it, but the added fiber and other goodies is such a bonus that it's to good to pass up!

There goes the milk!

 Yummy!  I love everything in the batter stage!  

OK, I have to stop here and have a serious talk with you all.


All of a sudden the paper cupcake liners I have been buying do NOT fit my cupcake pans?!?!?!?!

I don't thing they shrunk in the dishwasher?

What the heck is going on?

See all these little puckers?  They can really mess up the appearance of the muffin!  Does anyone else have this problem?  Do they come in different sizes, and I am just needing to get my glasses adjusted to read the very fine print?

Well, anywho.... I filled them the best that I could.

And they baked up quite nicely......except......

 Ooops!  Now where did that one go?  Must have been a quality control inspection going on while I wasn't looking!  

I sent 17 to school, and the container came back empty, so this recipe is a keeper!

  3. I'm still super jealous you have your own apple tree!
    Those muffins sound like the perfect healthy snack. I bet my kids would love them too! And you're not the only ones with the muffin liner issues. Although, I tend to have the opposite problem-the liners are too small for some of my pans!

    I used to live in a Southern Indiana home that had a small orchard with a dozen apple trees! Boy do I miss that home this time of year :)

  6. The muffins look delicious. I have both sizes of muffin pans I seem to always have the wrong size pan. We are stuck with what the store carries. Nice to have your own tree
